Sous Vide is a French cooking method by vacuum sealing food in a bag or canning jar, then cooking for a long time to a very precise temperature in a water bath. It’s a foolproof cooking method with guaranteed results every time.

These sous vide egg bites are a perfectgrab-and-go breakfast that’s packed with protein and full of flavor. There areunless ways to prepare them and I love to cook them with different flavors. Toget started, you’ll need some sous vide egg bites essentials.

Equipment You’ll Need

I didn’t use a blender for this quick and easy recipe, but ifyou’d like your veggies and cheese to be equally distributed with a veryuniform texture like the eggs at Starbucks, you can mix everything in a blenderand puree it first.

  • Eggs: You can use whole eggs or egg whites for this recipe.
  • Cheese of Your Choice: I used Cheddar cheese for this basic recipe. Some other great options include cottage cheese, swiss, Monterey Jack, mozzarella, and Gruyère cheese. You can also mix in cream cheese.
  • Salt and Pepper: Add less salt if your cheese is salty.
  • Green Onions: It adds a very nice fresh and delicate onion flavor to the egg bites. I recommend adding this to all your egg bites.
  • Non-stick Cooking Spray: Without the cooking spray, egg bites can stick to the mason jar and be difficult to unmold. After lots of experimentation, I’ve found that you need to spray generously with NON-STICK oil spray to prevent sticking. Using a regular oil spray won’t work as well. Alternatively, you can take a stick of butter and run it around the sides of the mason jars.

The ingredients above are required for making basic delicious sous vide egg bites, and you can add other ingredients like bacon, spinach, bell peppers, and onions to make them even more flavorful.

Step-By-Step Instructions

Step 1: Spray with Oil Spray and Add Green Onions and Cheese

Spray each mason jar generously with non-stick oil spray.

Add chopped green onions and cheese to each mason jar (you can customize with your favorite ingredients), filling about 1/3 full. Some recipes call for mixing the ingredients together before adding them to the jars, but I find it difficult to control the proportions that way and also quite messy filling the mason jar.

Step 2: Beat the Egg and Add the Mixture to Mason Jars

In a large measuring cup, whisk together eggs, salt, and pepper.

Pour the egg mixture to the jar, leaving about 1/2 inch from the top. (If you pour too little mixture to the jar, the mason jars can float in the water bath.)

Step 3: Close with the Lid and Preheat the Sous Vide Machine

Close the lid “fingertip tight”. (You can easily open with 2 fingers).

Fill the container or pot with water and set the temperature of your sous vide circulator to 172°F (73°C).

Step 4: Sous Vide

Place the mason jars in the water before the water gets hot. Cook for 1 hour.

When the timer goes off, remove the jars from the water, and let them cool for about 10 minutes. Run a knife around the edges of each jar to loosen (watch the video for a visual tutorial). Remove them from the jars and serve warm immediately (or freeze for meal prep).

Tips & Tricks

  • Grease your mason jars properly and use a high-quality non-stick cooking spray.
  • Close the lid “fingertip tight”:Twist the lid gently until “fingertip tight”, which means the lid is barely closed and can be easily opened with 2 fingertips. This tightness prevents water from getting into the jar while allowing air bubbles to escape. If it’s too tight, the jars can crack easily when the trapped air presses against the glass.
  • Adding the mason jars to the water bath when the water is not completely heated will also help to prevent the jars from breaking.
  • For meal prep, let the jars cool down to room temperature before putting in the refrigerator.
  • Get creative: Feel free to add chopped veggies or bacon to your egg bites.

Temperature And Time

The sweet spot for sous vide cooking egg bites is at 172°F (73°C) for 1 hour. You can leave the egg bites slightly longer than this (an extra 30 minutes is fine) and it won’t overcook your egg bites.

  • 1/4 tsp kosher salt (if you use regular table salt, use 1/8 tsp)
  • 1/4 tsp freshly ground black pepper
  • 1 cup shredded cheese of your choice I used cheddar cheese in this recipe
  • 3/4 cup chopped green onions
  • non-stick cooking spray (It’s important to use a good-quality non-stick cooking spray so that your egg bites won’t stick to the mason jars. Alternatively, you can take a stick of butter and run it around the sides of the mason jars.)
