Start by grating or slicing the vegetables, and then cut your beef into strips
Fry off the beef, grated carrot and scallions in a pan over medium high heat with a little oil until the beef is just done and then set aside
Beat the eggs in a bowl and add to a hot pan with the oil. When the eggs have set flip the egg patty over and then add the beef and veg back in
In a separate pan add all the ingredients for the sauce (except the cornflour) over a medium high heat. Leave for 3-4 minutes and then add the cornflour and turn up the heat and stir. When the cornflour has dissolved and the sauce has reduced slightly take it off the heat
Serve the Beef Fu Yung hot on a plate (or plates if serving 2) and pour over the delicious homemade sauce. Top with the coriander (US cilantro) and freshly chopped red chilli if using
